A month later and we’re still picking apples off our trees. The freezer is full of applesauce and I’ve done two batches of dried apples. Since I can’t eat them right now (ketosis on day 4! Woo!) the picking is wholly recreational, at this point. Their flavor has sharpened, gotten both tarter and sweeter, so I’m now 95% sure they are Gala apples.
Anyway: this tree bowls me over. It’s doing this with nothing but a hard pruning. No spraying. No fertilizing. I am awed by and grateful for its continuing bounty. Come December, this tree is getting one hearty wassail.
